  • 4 large organic sweet potatoes, peeled and cubed
  • 23 tablespoons extra virgin olive oil
  • 1 cup almond milk (or your favorite plant-based milk)
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1.5 cups raw pecans

Instructions

  1. Boil the cubed sweet potatoes in salted water until fork-tender (15-20 minutes). Drain.
  2. In the pot, combine sweet potatoes with olive oil, almond milk, vanilla extract, butter, brown sugar, maple syrup, cinnamon, nutmeg, and allspice. Mash until smooth.
  3. Fold in soaked raisins and half of the vegan marshmallows. Transfer to a baking dish.
  4. Sprinkle remaining vegan marshmallows and pecans on top. Bake at 350°F (175°C) for about 90 minutes until golden brown.
  5. Let cool slightly before serving warm.
