  • 100 g sourdough starter, active and bubbly
  • 70 g cane sugar
  • 1 large egg, room temperature
  • 430 g bread flour
  • 5 g sea salt
  • 8 tbs unsalted butter, room temperature (113 g)
  • 5 tbs unsalted butter, room temperature (for filling)
  • 1/2 cup cane sugar (for filling)
  • 2 tbs cocoa powder, unsweetened (for filling)
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup whole milk (for glaze)
  • 1/4 cup cocoa powder, unsweetened (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 1 tsp vanilla (for glaze)

Instructions

  1. Warm the whole milk until lukewarm and combine it with the active sourdough starter and cane sugar in a large mixing bowl.
  2. Mix in the egg until well combined, then gradually add bread flour and sea salt to form a dough.
  3. Knead the dough on a floured surface for about 10 minutes until smooth, then place it in a greased bowl, cover, and let it rise until doubled in size (about 4-6 hours).
  4. Prepare the filling by creaming softened butter with cane sugar and cocoa powder; fold in semi-sweet chocolate chips.
  5. Roll out the risen dough into a rectangle, spread the filling evenly, roll tightly into a log, and cut into pieces.
  6. Place on a lined baking sheet and let rise again for 30-45 minutes.
  7. Bake at 350°F (175°C) for about 30 minutes until golden brown.
  8. For the glaze, whisk together whole milk, cocoa powder, powdered sugar, and vanilla; drizzle over rolls before serving.
