  • 150200 grams water
  • 150 grams active sourdough starter
  • 40 grams sugar
  • 500 grams bread flour
  • 10 grams salt
  • 75 grams dried blueberries (optional)
  • 20 grams honey (for boiling)

Instructions

  1. Cook blueberries in a saucepan over medium-low heat for about five minutes until juicy. Mash lightly.
  2. In a large bowl, mix active sourdough starter with blueberry mixture and sugar. Combine with bread flour and salt until shaggy.
  3. Knead by hand for six minutes until smooth; let rest for an hour covered.
  4. Knead briefly again, adding dried blueberries if using, then let rise until doubled (8-12 hours).
  5. Shape dough into bagels and allow them to puff up on a baking sheet.
  6. Boil in honey-water bath for thirty seconds on each side before baking.
  7. Bake at 425°F for 20-25 minutes until golden brown.
