  • 325 grams warm water
  • 25 grams honey
  • 20 grams avocado oil (or vegetable oil)
  • 500 grams white bread flour
  • 10 grams salt
  • 150 grams dried raisins
  • 225 grams powdered sugar
  • 78 grams melted butter
  • 2 Tablespoons cinnamon
  • 99 grams sugar (either brown sugar or cane sugar works)
  • 75 grams melted butter (for icing)
  • 1 Tablespoon vanilla
  • 4 Tablespoons water or milk (as needed)

Instructions

  1. Start with an active sourdough starter that passes the float test.
  2. In a large bowl, mix warm water, starter, honey, and oil until combined.
  3. Gradually add flour while mixing until you form a shaggy dough.
  4. Let the dough rest for one hour (autolyse) before incorporating salt.
  5. Use the stretch and fold technique over four rounds spaced by 30 minutes to build strength.
  6. Roll out the dough into a rectangle, spread melted butter, sprinkle cinnamon sugar, and add plumped raisins.
  7. Roll tightly into a log and cut into rounds using dental floss for clean edges.
  8. Allow rolls to rise in an oiled pan for about 60-90 minutes.
  9. Refrigerate for one hour before baking at preheated temperature until golden brown.
  10. Drizzle with icing made from powdered sugar, melted butter, vanilla, and water.
