  • 3 teaspoons psyllium husk powder
  • 2 tablespoons date sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 pack instant yeast (2 teaspoons)
  • 1 cup water
  • 2 cups flax milk (or other plant milk)
  • 4 tablespoons coconut butter
  • 1 cup date sugar
  • 1 cup chocolate chips, melted with 1/4 cup coconut butter
  • 2 tablespoons coconut butter
  • 2 tablespoons cacao powder
  • 1/2 cups peanuts, chopped
  • Pinch salt
  • 2.5 cups organic powdered sugar
  • 1 cup natural peanut butter
  • 1 teaspoon pure vanilla extract
  • 1/2 cup unsweetened flax milk (or other plant milk)
  • 2 tablespoons maple syrup

Instructions

  1. Proof the yeast in warm water for 10 minutes until foamy.
  2. In a large bowl, combine cassava flour, psyllium husk powder, date sugar, baking powder, baking soda, and salt.
  3. Add the proofed yeast along with flax milk and melted coconut butter to the dry ingredients; stir until a dough forms.
  4. Cover the bowl with a towel and let it rise for 45 minutes.
  5. Preheat oven to 350°F (175°C).
  6. Roll out the dough into a rectangle and spread melted chocolate filling over it.
  7. Sprinkle chopped peanuts on top and roll tightly into a log; slice into rolls.
  8. Place rolls in a greased baking dish and bake for 20-25 minutes.
  9. Prepare icing by mixing peanut butter, flax milk, maple syrup, vanilla extract, and powdered sugar until creamy.
  10. Drizzle icing over cooled rolls before serving.
