  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup frozen peas and carrots
  • 1/4 cup fresh lemon juice
  • Zest of 1 lemon
  • 2 teaspoons dried Italian herbs (oregano, thyme, basil)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Lightly coat the inside of a slow cooker with olive oil or non-stick spray.
  2. Sauté onion in olive oil over medium heat until translucent (about 4-5 minutes), then add minced garlic for an additional minute.
  3. Layer the sautéed onions and garlic in the slow cooker followed by the rice.
  4. In a bowl, mix chicken broth, lemon juice, zest, herbs, salt, and pepper; pour over the rice.
  5. Add chicken breasts on top of the mixture and sprinkle with peas and carrots.
  6. Cook on low for 4 to 6 hours or high for 2 to 3 hours until chicken reaches an internal temperature of at least 165°F.
  7. Fluff rice before serving and garnish with fresh parsley.
