  • 1 cup low-sodium beef broth
  • 1 clove garlic, minced
  • 1 large onion, chopped
  • 1 pound russet potatoes, peeled and cut into chunks
  • 2 teaspoons dried parsley
  • Salt and pepper to taste
  • 1 tablespoon oil

Instructions

  1. Heat oil in a large skillet over medium heat. Brown the sliced beef sausages for about 7–10 minutes until golden brown. Remove from skillet and set aside.
  2. In the same skillet, sauté chopped onions until soft (about 3–5 minutes), then add minced garlic and cook for an additional minute.
  3. In the slow cooker, combine browned sausages, sautéed onions and garlic, potato chunks, beef broth, salt, pepper, and parsley.
  4. Stir gently to combine all ingredients. Cover and cook on high for 2–3 hours or low for 4–6 hours until the potatoes are tender.
