  • 2 ½ pounds stew meat (beef)
  • ½ teaspoon EACH: black pepper, garlic salt, celery salt
  • 1/4 cup flour
  • 36 tablespoons olive oil
  • 3 tablespoons cold butter (divided)
  • 3 cups yellow onions (diced)
  • 4 cloves garlic (minced)
  • 1 cup apple vinegar
  • 4 cups beef broth
  • 2 beef bouillon cubes
  • 3 tablespoons tomato paste
  • 5 medium carrots (cut into 1-inch chunks)
  • 1 lb baby Yukon gold potatoes (halved)
  • 2 bay leaves
  • 1 sprig rosemary
  • 1 cup frozen peas
  • (Optional) 1/4 cup Cold Water + 3 tablespoons Corn Starch for thickening.
  • (Optional) 2-3 drops Gravy Master for additional color.

Instructions

  1. Cut beef into 1-inch cubes and season with black pepper, garlic salt, celery salt, and flour.
  2. Heat olive oil in a skillet over medium-high heat; brown the meat in batches and transfer to the slow cooker.
  3. Sauté onions until translucent; add minced garlic and deglaze with apple vinegar before adding to the slow cooker.
  4. Combine remaining ingredients except peas; stir well.
  5. Cook on low for 7½ to 8 hours or high for 3½ to 4 hours until meat is tender.
  6. Add frozen peas during the last 15 minutes of cooking.
  7. For thicker stew, mix cornstarch with cold water and stir into the stew as needed.
