  • 1 whole bulb of garlic, halved
  • 2 brown onions, halved
  • 2.4 kg lamb shoulder (bone-in)
  • 2 tsp herbs de Provence
  • 2 tbsp sea salt flakes
  • 1/4 tsp freshly ground black pepper
  • 3 tbsp olive oil
  • 5 sprigs fresh rosemary
  • 375 ml water
  • 1 cup white grape juice

Instructions

  1. Preheat your oven to 220°C (428°F).
  2. Arrange the halved garlic bulbs and onions in a roasting pan.
  3. Rub the lamb shoulder with olive oil, then season with herbs de Provence, salt, and pepper.
  4. Make incisions on the lamb's surface and insert garlic slices and rosemary sprigs.
  5. Place the seasoned lamb on top of the garlic and onions.
  6. Add water and white grape juice to the pan.
  7. Cover tightly with foil or a lid and reduce the oven temperature to 170°C (340°F).
  8. Roast for about 3.5 hours until tender.
  9. Uncover for an additional 30 minutes at 200°C (392°F) for browning.
  10. Let rest before slicing and serving.
