  • 1 ½ pounds boneless chicken breast or thighs
  • 2 tablespoons extra virgin olive oil
  • 3 bell peppers (any color)
  • 1 yellow onion
  • 4 ounces cream cheese
  • ¾ cup salsa verde
  • Tortillas for serving
  • 2 tablespoons smoked paprika
  • 2 teaspoons chili powder or tajin
  • 2 teaspoons cumin
  • 2 teaspoons dried oregano
  • Kosher salt and black pepper
  • 2 tablespoons salted butter
  • 3 cloves garlic, chopped
  • Chili flakes (to taste)
  • 1 poblano pepper, sliced
  • Limes, and cilantro for garnish
  • Cotija cheese (or your favorite cheese)

Instructions

  1. Heat olive oil in a large skillet over high heat. Add sliced chicken seasoned with paprika, chili powder, cumin, oregano, salt, and pepper. Cook until browned and cooked through (8-10 minutes). In the last few minutes, add butter, garlic, and chili flakes.
  2. Remove chicken and sauté sliced onions in the same skillet for about 5 minutes. Add bell peppers and poblano pepper and cook until tender.
  3. Return chicken to the skillet and mix well.
  4. In a separate pan over low heat, combine cream cheese and salsa verde until smooth. Stir in chopped pickled jalapeños.
  5. Serve chicken mixture in warmed tortillas topped with creamy sauce and cilantro.
