  • 1 1/4 cups chicken broth (or water with 1 chicken bouillon)
  • 14 oz can pureed tomatoes
  • 1/2 green bell pepper (chopped)
  • 1 red bell pepper (chopped)
  • 1/2 cup Kalamata olives (pitted and sliced)
  • 14 oz can red kidney beans (rinsed and drained)
  • 1/2 cup sweet corn (fresh or frozen)
  • 1/2 cup fresh parsley (chopped)
  • 1/2 teaspoon salt
  • 2 teaspoons sweet paprika
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • 1 1/2 teaspoon dried oregano
  • 1/4 teaspoon freshly grated black pepper
  • 3 tablespoons corn starch
  • 1/4 cup cold water

Instructions

  1. Heat olive oil in a large pot over high heat; add ground turkey and brown it without stirring for better flavor.
  2. Stir in chili powder for one minute, then add chopped onion and sauté until translucent. Add minced garlic and cook for another minute.
  3. Pour in chicken broth and pureed tomatoes, followed by bell peppers, olives, beans, and salt. Bring to a boil then reduce heat to simmer for 30 minutes with the lid on.
  4. Uncover and simmer for an additional 15 minutes until thickened. Stir in sweet corn and parsley before serving.
