  • 1 cold egg

  • For the glaze: 1 cup powdered sugar, 2–3 tbsp heavy cream, 1/4 tsp pumpkin puree, and 1/4 tsp pumpkin pie spice

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, ginger, nutmeg, baking soda, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. In another bowl, mix pumpkin puree, milk, egg, and vanilla until smooth.
  5. Fold wet ingredients into the dry mixture until just combined; avoid overmixing.
