  • 2 eggs
  • 1 tablespoon plain flour

  • 2 tablespoons vegetable oil (use more if required)

Instructions

  1. Peel and grate the sweet potato into fine shreds. Squeeze out excess moisture using a clean kitchen towel.
  2. In a mixing bowl, combine grated sweet potato, grated onion, eggs, flour, and salt. Mix until well combined.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Scoop about half a cup of the mixture into the pan for each hash brown. Flatten slightly without pressing too hard.
  5. Cook for about 5-7 minutes on each side until golden brown and crispy.
  6. Transfer to paper towels to absorb excess oil before serving warm.
