  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves (or 1/2 tsp dried)
  • Salt and black pepper, to taste
  • 8 oz cream cheese
  • 3/4 cup Parmesan cheese, finely grated
  • 1/2 cup Gruyère cheese, grated
  • 2 large eggs, divided

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
  2. In a skillet over medium heat, melt butter with olive oil. Add diced onions and cook until soft (about 5 minutes).
  3. Stir in minced garlic and sliced mushrooms; sauté until browned (about 8 minutes). Season with thyme, salt, and pepper.
  4. Remove from heat; stir in cream cheese and Parmesan until creamy.
  5. Unroll puff pastry on a floured surface; cut diagonal strips down each long side while leaving the center intact.
  6. Fill the center with the mushroom mixture and braid the strips over the filling.
  7. Transfer to the prepared tray; brush with beaten egg.
  8. Bake for about 20–22 minutes until golden brown.
