  • 2 medium zucchinis (sliced into half-moons)
  • 8 ounces mushrooms (sliced)
  • 1 medium onion (thinly sliced)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • Salt and black pepper to taste
  • 1 teaspoon dried thyme (optional)
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Wash and slice the zucchinis, mushrooms, onions, and mince the garlic.
  2. Heat olive oil in a large skillet over medium heat. Add onions and sauté for about 3 minutes until softened.
  3. Stir in minced garlic and mushrooms, cooking for another 3-4 minutes until tender.
  4. Add zucchini slices along with salt, pepper, and thyme if using. Sauté for an additional 3-5 minutes until zucchini is tender yet firm.
  5. Taste and adjust seasoning as needed. Serve warm, garnished with parsley if desired.
