  • 2 salmon filets (46 oz each)
  • ½ lb asparagus, ends trimmed
  • 1 lb baby potatoes, quartered
  • 3 tbsp olive oil
  • ½ tbsp dijon mustard
  • Juice of 1 lemon
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 400°F and line a large baking sheet with parchment paper.
  2. In a bowl, toss quartered baby potatoes with 2 tablespoons of olive oil and half of the seasoning mix (garlic powder, onion powder, paprika). Spread evenly on one side of the baking sheet.
  3. Bake the potatoes for about 8 minutes.
  4. While they bake, brush salmon filets with dijon mustard and season with salt and pepper.
  5. After 8 minutes, remove the potatoes from the oven and push them to one half of the pan. Add asparagus next to them and place salmon filets on the other side. Drizzle everything with remaining olive oil and sprinkle with leftover seasonings.
  6. Return to the oven for an additional 15-20 minutes until salmon is cooked through and potatoes are fork-tender.
