  • 4 boneless beef loin chops (150g each)
  • 35g plain flour
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil
  • 2 teaspoons fresh rosemary, finely diced
  • 2 cloves fresh garlic, finely diced
  • 120ml chicken stock
  • 90g unsalted butter, diced into small cubes
  • 1 lemon, cut into wedges

Instructions

  1. In a shallow dish, mix plain flour, salt, garlic powder, and black pepper. Coat both sides of the beef chops evenly.
  2. Heat olive oil in a large pan over medium-high heat. Sear the beef chops for about three minutes on each side until golden brown.
  3. Remove the chops and reduce heat. Sauté rosemary and garlic in the remaining fat until fragrant. Add chicken stock and butter; whisk until melted and slightly thickened.
  4. Return the chops to the pan; baste with the sauce for one minute before serving with lemon wedges.
