  • 450 g ripe medium vine tomatoes, halved
  • 1 small head of garlic (or 4 large cloves), unpeeled
  • 30 ml olive oil
  • Salt and pepper to taste
  • 225 g pasta (your choice)
  • 120 g ricotta cheese
  • Fresh basil leaves
  • Grated parmesan cheese for serving

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place halved tomatoes on a baking dish along with the whole garlic head.
  3. Drizzle with olive oil, season with salt and pepper, and roast for 20 minutes covered by foil for another 10.
  4. Cook pasta according to package instructions; reserve some cooking water.
  5. Blend roasted tomatoes and garlic with ricotta and basil until smooth.
  6. Combine pasta with the sauce, adjusting consistency with reserved water as needed.
  7. Serve topped with fresh basil and grated parmesan.
