  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 large head garlic
  • 1 cup (250 ml) heavy cream
  • 1/4 cup (60 ml) whole milk
  • 1 tablespoon unsalted butter
  • 1 tsp fresh thyme leaves
  • 1/4 tsp nutmeg
  • 1/2 cup (40g) grated parmesan cheese, divided
  • 2 cups (about 220g) shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about 30 minutes.
  2. Grease a 9×13-inch baking dish with butter. Thinly slice the potatoes using a knife or mandoline slicer and arrange them upright in the dish.
  3. In a saucepan over medium heat, combine heavy cream, whole milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper until warm but not boiling.
  4. Squeeze out roasted garlic cloves into the cream mixture and stir until well combined.
  5. Pour the creamy mixture over the layered potatoes until they are about three-quarters covered.
  6. Cover with foil and bake for about 1 hour and 15 minutes until tender.
  7. Remove foil, sprinkle remaining cheeses on top, and bake uncovered for an additional 15 minutes until golden brown.
