  • 50 grams active sourdough starter
  • 350 grams filtered water
  • 500 grams bread flour
  • 10 grams salt
  • 1 head of roasted garlic
  • 14 grams olive oil
  • 3 grams fresh rosemary
  • Optional: 175 grams cheese (Asiago or Gruyere)

Instructions

  1. Preheat the oven to 400°F (200°C). Roast the garlic wrapped in foil for about 30-35 minutes until tender.
  2. In a bowl, combine the sourdough starter and water until dissolved. Gradually add flour and salt until no dry bits remain.
  3. Squeeze in roasted garlic and add chopped rosemary (and cheese if using); mix well.
  4. Cover and let rise at room temperature for approximately 12 hours until doubled.
  5. Shape the dough into a round loaf and let it rest for another hour while preheating your oven to 450°F (230°C).
  6. Score the top of the loaf and bake for 30-35 minutes until golden brown.
