  • ½ cup seasoned panko breadcrumbs
  • 4 garlic cloves (minced)
  • 3 tablespoons Greek yogurt
  • 2 tablespoons grated parmesan cheese
  • 1 tablespoon Dijon mustard
  • 2 teaspoons apple cider vinegar
  • ½ lemon (juiced)
  • ⅓ cup olive oil

Instructions

  1. Preheat oven to 425°F. Spread broccoli florets on a baking sheet and drizzle with olive oil, seasoning with salt and pepper.
  2. Roast for 15-20 minutes until tender and slightly charred.
  3. In a small skillet, melt butter over medium heat and toast panko breadcrumbs until golden brown.
  4. In a food processor, combine garlic, Greek yogurt, parmesan cheese, mustard, vinegar, lemon juice, salt, and pepper. Blend until smooth while slowly adding olive oil to emulsify.
