½ cup seasoned panko breadcrumbs
4 garlic cloves (minced)
3 tablespoons Greek yogurt
2 tablespoons grated parmesan cheese
1 tablespoon Dijon mustard
2 teaspoons apple cider vinegar
½ lemon (juiced)
⅓ cup olive oil
Instructions
Preheat oven to 425°F. Spread broccoli florets on a baking sheet and drizzle with olive oil, seasoning with salt and pepper.
Roast for 15-20 minutes until tender and slightly charred.
In a small skillet, melt butter over medium heat and toast panko breadcrumbs until golden brown.
In a food processor, combine garlic, Greek yogurt, parmesan cheese, mustard, vinegar, lemon juice, salt, and pepper. Blend until smooth while slowly adding olive oil to emulsify.
Toss roasted broccoli with the dressing in a large bowl. Top with toasted breadcrumbs and additional parmesan if desired.
