  • 2 persian cucumbers, sliced into half-moons
  • 1/2 cup diced red onion
  • 1/2 cup pitted kalamata olives
  • 1/3 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • Juice of 1/2 lemon
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon salt, or as preferred
  • 1/4 teaspoon ground black pepper, or as preferred

Instructions

  1. Prepare all ingredients: Rinse and drain the chickpeas, chop the grape tomatoes, slice cucumbers, dice red onion, and pit kalamata olives.
