Ingredients

Scale
  • 1 box (15 ounces) red velvet cake mix (plus ingredients as directed – eggs, water, and oil)
  • 8 ounces semi-sweet baking chocolate
  • ½ cup heavy cream (or coconut cream for an alternative)
  • Powdered sugar (for garnish)

Instructions

  1. Prepare the ganache: Chop the chocolate and place it in a bowl. Heat the heavy cream until simmering, then pour it over the chocolate. Stir until smooth and let it chill for at least two hours.
  2. Preheat your oven to 350°F (175°C) and line muffin tins with cupcake liners.
  3. Mix the red velvet cake mix according to package instructions.
  4. Fill cupcake liners halfway with batter, then place a tablespoon-sized scoop of chilled ganache in the center of each.
  5. Cover with more batter until the liners are three-quarters full.
  6. Bake for 20 minutes or until toothpick inserted into the side comes out clean (not from the center).
  7. Let cool slightly before dusting with powdered sugar and serving warm.
