  • 1/2 cup unsalted butter, softened
  • 1/2 cup plus 1 tablespoon light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons red gel food coloring
  • 1 1/4 cups all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup red sanding sugar for rolling

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a mixing bowl, cream together softened butter, light brown sugar, and granulated sugar until fluffy (3–5 minutes).
  3. Add in the egg and vanilla extract; mix until fully combined.
  4. Stir in red gel food coloring until well blended.
  5. In a separate bowl, sift together flour, cocoa powder, baking soda, baking powder, and salt.
  6. Gradually fold dry ingredients into wet mixture until just combined.
  7. Chill dough for at least 30 minutes.
  8. Roll chilled dough into balls and coat with sanding sugar before placing on prepared baking sheets.
  9. Bake for 10–12 minutes until edges are set but centers are soft. Let cool for 5 minutes before transferring to wire racks.
