  • 812 medium roasting potatoes
  • 200 g crumbled feta cheese
  • 3 tbsp small capers or sliced black olives
  • 2 large cloves of garlic (sliced)
  • 1 red onion (thinly sliced)
  • small sprig of torn rosemary
  • 1 lemon (cut into quarters)
  • olive oil for drizzling
  • salt and pepper to taste

Instructions

  1. Preheat your oven to 200C (400F) and drizzle olive oil in a roasting tray.
  2. Rinse and pierce the potatoes, then microwave them covered with damp paper towels for 7-12 minutes until tender.
  3. Transfer potatoes to the skillet and gently smash each one to expose the flesh.
  4. Drizzle with olive oil, season with salt and pepper, and scatter garlic slices and torn rosemary on top.
  5. Roast in the oven for about 10 minutes until golden.
  6. Add crumbled feta and onion slices; return to the oven for another 5 minutes.
  7. Squeeze fresh lemon juice over the potatoes before serving.
