  • 1 tsp vanilla extract
  • 1/2 cup buttermilk, at room temperature
  • 1 cup canned pumpkin puree, at room temperature
  • 1/4 cup espresso or strong coffee
  • 1/3 cup whole milk
  • 1/2 cup sweetened condensed milk
  • 1/4 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1 cup unsalted butter, softened
  • 8 oz cream cheese, cold
  • 2 cups powdered sugar
  • 1 1/2 tsp vanilla extract
  • 2 tsp instant espresso powder
  • 1 1/2 tsp pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, cream softened butter and sugar until fluffy. Beat in eggs one at a time, followed by vanilla extract.
  4. Mix in pumpkin puree and buttermilk until combined.
  5. Gradually add dry ingredients to wet mixture without overmixing.
  6. Bake for 30-38 minutes until a toothpick comes out clean.
  7. While cooling, mix espresso with sweetened condensed milk and soak each layer generously.
  8. For frosting, beat together softened butter and cream cheese; gradually add powdered sugar followed by espresso powder and vanilla extract until smooth.
