  • ½ cup brown sugar (packed)
  • 1 large egg yolk (room temperature)
  • 1 teaspoon vanilla extract
  • 1 large egg (room temperature) for filling
  • ¼ cup brown sugar for filling
  • Pinch table salt for filling
  • ½ teaspoon pumpkin spice for filling
  • ¼ cup whole milk for filling
  • ½ cup pumpkin puree for filling
  • ¼ teaspoon vanilla extract for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large bowl, beat together room-temperature butter and cream cheese until smooth. Add granulated and brown sugars; mix until creamy. Incorporate the egg yolk and vanilla extract.
  3. Gradually add flour, pumpkin spice, and salt until fully combined.
  4. Roll dough into balls and coat in coarse sugar before placing on the baking sheet.
