  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1/4 cup melted butter or vegetable oil
  • 1 1/2 teaspoons vanilla
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup chopped pecans
  • 1 1/2 cups very hot water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, sugar, and spices until well combined.
  3. In a smaller bowl, mix pumpkin puree, milk, melted butter (or oil), and vanilla until smooth. Combine with dry ingredients to form a thick batter.
  4. Pour the batter into an 8-inch casserole dish.
  5. In another bowl, mix remaining sugars and chopped pecans; sprinkle over the batter. Carefully pour hot water on top without stirring.
  6. Bake for approximately 40 minutes until the center is set. Allow cooling for 5-10 minutes before serving.
