  • 3 cloves garlic
  • 2 tbsp avocado oil
  • 1 tsp ground ginger
  • 1 tsp ground cumin
  • 1 1/2 tsp ground turmeric
  • 1/2 tsp cinnamon
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp chili powder
  • 2 boneless skinless chicken breasts (cubed)
  • 1 can full-fat coconut milk (15oz)
  • 1/4 cup pumpkin puree

Instructions

  1. Dice the onion and mince the garlic.
  2. In a large frying pan over medium-low heat, add avocado oil, diced onion, and minced garlic; sauté until softened.
  3. Stir in ginger, cumin, turmeric, cinnamon, black pepper, salt, and chili powder; toast spices for about one minute.
  4. Increase heat to medium; add cubed chicken and toss until coated in spices; cook until edges are golden (about six minutes).
  5. In a bowl, mix the coconut milk with pumpkin puree until smooth; pour over the chicken mixture.
  6. Bring to a gentle simmer; reduce heat and let it cook for about eight minutes while stirring occasionally.
  7. Optionally mix arrowroot starch with water for thickening; add to curry if desired.
  8. Serve warm over rice or cauliflower rice.
