Ingredients

  • Olive oil
  • Sun-dried tomatoes
  • Garlic
  • Fresh sage leaves
  • Pumpkin puree
  • Low sodium chicken or vegetable broth
  • Ground beef or turkey or lentils
  • Onions
  • Carrots
  • Celery
  • White grape juice
  • Crushed tomatoes
  • Milk of choice
  • Pasta of your choice

Instructions

  1. Heat olive oil in a pot, sauté sun-dried tomatoes, garlic, and sage for 1 minute. Add pumpkin puree, broth, basil, and cinnamon; simmer for 15 minutes.
  2. In another pot, brown ground beef until fully cooked; drain excess liquid.
  3. In the meat pot, heat olive oil and cook diced onions, carrots, and celery until soft (8-10 minutes). Combine with ground meat.
  4. Add white grape juice to scrape up flavors from the pot; cook for 2 minutes.
  5. Transfer cooled pumpkin mixture to a blender; blend until smooth and mix back into meat and veggies.
  6. Stir in milk and season with black pepper; simmer for 30 minutes until thickened.
  7. Boil water and cook pasta as per package instructions.
