  • 1 cup fresh or frozen raspberries
  • 2/3 cup granulated sugar (to taste)
  • 1 1/2 tablespoons cornstarch
  • 1 tablespoon water
  • 1 tablespoon maple syrup (or other liquid sweetener)
  • 1/2 tablespoon dairy-free milk (or water)

Instructions

  1. In a saucepan, combine raspberries and sugar over medium heat until the berries release their juices.
  2. Mix cornstarch with water until smooth; add to the raspberry mixture and stir until thickened.
  3. Roll out puff pastry on a floured surface to about an eighth of an inch thick.
  4. Cut each sheet into triangles. Place raspberry filling on the wide end and roll towards the point.
  5. Brush each croissant with dairy-free milk or water before baking.
  6. Bake at 400°F (200°C) for 25-30 minutes until golden brown.
