  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 4 cups shredded cabbage or coleslaw mix
  • 1 cup shredded carrots
  • 4 green onions, sliced
  • 1 package rice noodles or lo mein noodles
  • Optional: hoisin sauce, sriracha or chili paste, sesame seeds, extra green onions, chili flakes

Instructions

  1. Cook noodles according to package instructions; set aside.
  2. In a skillet, heat sesame oil over medium-high heat. Add ground beef and cook until browned.
  3. Stir in garlic, ginger, soy sauce, hoisin (optional), rice vinegar, and sriracha; cook for 2–3 minutes.
  4. Add cabbage and carrots; sauté until tender but crisp (3–4 minutes). Stir in green onions.
  5. Combine cooked noodles with the mixture; heat through for 1–2 minutes.
  6. Serve hot with garnishes like sesame seeds and chili flakes.
