  • 3 russet potatoes (cooked and cubed)
  • 1 block cheddar cheese (cut into strips)
  • ½ cup sour cream
  • ¼ cup green onion (diced)
  • â…” cup cornstarch
  • 100 g panko breadcrumbs
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 egg
  • Vegetable oil (for frying)

Instructions

  1. In a large bowl, mash the cooked russet potatoes and mix in diced green onions, sour cream, salt, and pepper until well combined.
  2. Fold in the cheddar cheese strips carefully.
  3. Set up three shallow bowls: one with flour, one with beaten egg, and one with a mixture of cornstarch and panko breadcrumbs.
  4. Form the potato mixture into sticks, then dip each stick first in flour, then in egg wash, and finally coat with the panko mixture.
  5. Heat vegetable oil in a deep fryer or large pot to 350°F (180°C). Fry the coated sticks until golden brown, about 3 minutes.
  6. Drain on paper towels and season lightly with salt before serving.
