  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 (3.4 oz) box instant pistachio pudding mix
  • 1 1/2 cups milk
  • 1/2 cup heavy cream
  • 1/4 cup chopped pistachios for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare a baking pan by greasing it or lining it with parchment paper.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the butter mixture until just combined.
  4. Press the dough into the prepared pan and bake for 12–15 minutes or until lightly golden. Allow to cool completely.
  5. For the topping, whisk together pistachio pudding mix, milk, and heavy cream in a separate bowl. Refrigerate for about 5-10 minutes to thicken.
  6. Spread the thickened pudding over the cooled cookie base, then sprinkle with chopped pistachios. Lightly press them into the pudding layer.
  7. Chill in the refrigerator for at least 2 hours before cutting into squares.
