  • 1 medium pineapple
  • 1 ½ lbs boneless skinless chicken breasts
  • ½ tsp Salt
  • ¼ tsp ground black pepper
  • 1 Tbsp cooking oil (vegetable oil, coconut oil, olive oil etc.)
  • 1 cup pineapple chunks (from the pineapple boats)
  • ¼ cup soy sauce
  • ¼ cup water
  • 3 Tbsp brown sugar
  • 1 tsp ginger powder
  • 3 Tbsp rice vinegar
  • 2 tsp cornstarch
  • 3 garlic cloves (minced)
  • 2 cups cooked rice (brown rice or white rice)
  • 1 green onion (chopped)
  • ½ tsp sesame seeds

Instructions

  1. Prepare the pineapple boats by cutting a medium pineapple in half lengthwise and scooping out the flesh while reserving one cup of chunks.
  2. Season bite-sized pieces of boneless chicken breasts with salt and pepper in a mixing bowl.
  3. Heat cooking oil in a skillet over medium-high heat, then add the chicken and cook until lightly browned (about 5-7 minutes).
  4. In another bowl, whisk together soy sauce, water, brown sugar, ginger powder, rice vinegar, cornstarch, minced garlic, and reserved pineapple chunks. Pour this mixture over the cooked chicken and let simmer for about 5 minutes until thickened.
  5. Serve warm rice into each pineapple boat topped with the saucy chicken mixture and garnish as desired.
