  • 1 tbsp Rice Vinegar
  • 1.5 cups Cooked Rice (white or brown)
  • 1 cup Pineapple Chunks
  • 1/2 Red Bell Pepper (diced)
  • Green Onions (for garnish)

Instructions

  1. In a bowl, whisk together soy sauce, pineapple juice, honey, rice vinegar, cornstarch mixed with water, and additional water to create the sauce.
  2. Heat olive oil in a large skillet over medium heat. Cut chicken into bite-sized pieces and cook until browned—about 5-7 minutes.
  3. Add minced garlic and diced bell pepper to the skillet; sauté for another 1-2 minutes until fragrant.
