  • 1 pound boneless, skinless chicken breasts
  • Salt and fresh ground pepper (to taste)
  • ½ cup low sugar honey barbecue sauce (divided)
  • 1 can (20 ounces) pineapple chunks (drained)
  • ½ tablespoon olive oil

Instructions

  1. Preheat your oven to 400˚F.
  2. Grease a baking dish with cooking spray.
  3. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
  4. Pour 1/3 of the barbecue sauce over the chicken and rub it in well.
  5. Top with pineapple chunks, then add the remaining barbecue sauce.
  6. Cover and marinate in the fridge for at least 30 minutes (up to 2 hours).
  7. Drizzle olive oil over the chicken before baking uncovered for 32-35 minutes or until cooked through (internal temperature of 165˚F).
  8. Let it rest for five minutes before serving.
