  • 1 cup unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 teaspoon pure vanilla extract
  • 2 large eggs (room temperature)
  • 2 cups creamy peanut butter
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 cups strawberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper.
  2. In a stand mixer, cream together the softened butter, peanut butter, and sugar until light and fluffy.
  3. Add in the eggs one at a time, mixing well after each addition before adding vanilla extract.
  4. In a separate bowl, whisk together flour and baking powder, then gradually mix into the wet ingredients until fully combined.
  5. Press two-thirds of the dough into the prepared baking dish as the base layer.
  6. Spread the strawberry jam evenly over the dough without reaching the edges.
  7. Crumble the remaining dough over the jam layer.

  9. Allow to cool for at least 20 minutes before slicing into squares.
