Ingredients

  • 16 ounces rotini (or any hearty pasta)
  • 1 medium cucumber (chopped)
  • 1 pint grape tomatoes (halved)
  • 1 small bell pepper (chopped)
  • ¼ cup finely diced red onion
  • 1 cup Italian dressing
  • ⅔ cup feta cheese (crumbled)
  • ¼ cup sliced black olives
  • 3 tablespoons chopped fresh parsley
  • Salt and black pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and let cool.
  2. While the pasta cools, chop the cucumber, halve the grape tomatoes, chop the bell pepper, and finely dice the red onion.
  3. In a large mixing bowl, combine cooled rotini, chopped vegetables, crumbled feta cheese, sliced olives, and parsley.
  4. Drizzle Italian dressing over the salad and toss gently to combine all ingredients.
  5. Season with salt and black pepper to taste.
