- 1 medium cucumber (chopped)
- 1 pint grape tomatoes (halved)
- 1 small bell pepper (chopped)
- ¼ cup finely diced red onion
- 1 cup Italian dressing
- ⅔ cup feta cheese (crumbled)
- ¼ cup sliced black olives
- 3 tablespoons chopped fresh parsley
- Salt and black pepper (to taste)
- Bring a large pot of salted water to a boil. Add the rotini and cook according to package instructions until al dente. Drain and let cool.
- While the pasta cools, chop the cucumber, halve the grape tomatoes, chop the bell pepper, and finely dice the red onion.
