  • 1 lb ground chicken sausage (sweet or spicy)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 14.5 oz can diced tomatoes, drained
  • 2 quarts chicken stock
  • 1/2 cup heavy cream
  • 1 cup ditalini pasta
  • 1/2 cup freshly grated Parmesan cheese
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add ground chicken sausage and brown it while breaking it into smaller pieces. Remove and set aside.
  2. In the same pot, sauté diced onion and minced garlic until soft and fragrant.
  3. Stir in drained tomatoes, chicken stock, basil, oregano, and return the cooked sausage. Simmer for about 10 minutes.
  4. Add ditalini pasta and cook according to package directions until al dente.
  5. Reduce heat, stir in heavy cream and Parmesan cheese until melted and combined.
