- 4 (6 ounce) salmon fillets, cut into cubes
- 3/4 cup fresh orange juice
- 2 tablespoons oil
- 2 teaspoons minced garlic
- 1 tablespoon fresh grated ginger
- 2–3 tablespoons honey
- 3 tablespoons low sodium soy sauce or tamari
- 1 tablespoon cornstarch
- 1/2 teaspoon red pepper flakes
- Cooked rice and broccoli for serving
- In a medium bowl, whisk together orange juice, oil, garlic, ginger, honey, soy sauce, red pepper flakes, and cornstarch.
- Marinate the salmon in the sauce for about 15 minutes.
- Heat oil in a pan over medium-low heat; sauté garlic and ginger for 2 minutes.
- Add marinated salmon to the pan; cook for about 3-4 minutes on each side until golden brown.
- Pour reserved marinade into a saucepan; bring to a gentle boil and thicken with cornstarch mixed with water.
- Combine thickened sauce with cooked salmon in the pan.
- Serve over rice with broccoli.
