  • 4 (6 ounce) salmon fillets, cut into cubes
  • 3/4 cup fresh orange juice
  • 2 tablespoons oil
  • 2 teaspoons minced garlic
  • 1 tablespoon fresh grated ginger
  • 23 tablespoons honey
  • 3 tablespoons low sodium soy sauce or tamari
  • 1 tablespoon cornstarch
  • 1/2 teaspoon red pepper flakes
  • Cooked rice and broccoli for serving

Instructions

  1. In a medium bowl, whisk together orange juice, oil, garlic, ginger, honey, soy sauce, red pepper flakes, and cornstarch.
  2. Marinate the salmon in the sauce for about 15 minutes.
  3. Heat oil in a pan over medium-low heat; sauté garlic and ginger for 2 minutes.
  4. Add marinated salmon to the pan; cook for about 3-4 minutes on each side until golden brown.
  5. Pour reserved marinade into a saucepan; bring to a gentle boil and thicken with cornstarch mixed with water.
  6. Combine thickened sauce with cooked salmon in the pan.
  7. Serve over rice with broccoli.
