  • 1/2 teaspoon kosher salt
  • 2 tablespoons granulated sugar
  • 1/4 cup butter (melted)
  • 3 large eggs
  • 4 (8-ounce) packages full-fat cream cheese
  • 3/4 cup full-fat sour cream
  • 1 and 1/2 cups granulated sugar
  • 1 tablespoon vanilla
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon kosher salt
  • 22 Oreos (chopped into a variety of sizes)
  • 1/3 cup heavy cream
  • 2/3 cup semisweet chocolate chips
  • 2 tablespoons butter
  • crushed Oreos (to top cheesecake, about 5 Oreos)

Instructions

  1. Soften cream cheese at room temperature.
  2. Preheat oven to 325°F and grease a 9-inch springform pan.
  3. Blend together 36 Oreos, salt, and sugar until fine crumbs form; mix with melted butter and press into the bottom of the pan.
  4. Bake crust for 12 minutes and let cool.
  5. Beat eggs until frothy; add softened cream cheese until smooth.
  6. Mix in sour cream, sugar, vanilla, lemon juice, and salt.
  7. Fold in chopped Oreos; pour filling over cooled crust.
  8. Bake using a water bath at 325°F for about 40 minutes.
  9. Cool gradually in the oven then refrigerate overnight before serving.
  10. Prepare ganache by heating heavy cream and mixing with chocolate chips.
