  • 16 oz. orecchiette pasta
  • 1 Tbsp unsalted butter
  • 16 oz. sliced button mushrooms
  • 1½ tsp minced garlic
  • 1 Tbsp cornstarch
  • 1 cup half-and-half
  • 1 cup milk
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • 2 tsp minced fresh thyme
  • ½ cup grated Parmesan cheese

Instructions

  1. Cook the orecchiette according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add sliced mushrooms and sauté without stirring for about 3-4 minutes until browned.
  3. Stir in minced garlic and cook for another 3-4 minutes until fragrant.
  4. In a bowl, whisk together cornstarch and half-and-half until smooth. Pour this into the skillet along with milk, salt, pepper, thyme, and Parmesan cheese.
  5. Simmer on medium-low heat for about 6-8 minutes, stirring occasionally until thickened.
  6. Gently toss the cooked orecchiette with the sauce until well combined. Serve hot.
