  • 1 box (3 oz) orange vegan gelatin mix
  • 1 cup orange juice
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • For the Frosting: 1 cup softened butter
  • 4 cups powdered sugar
  • 2 tbsp coconut cream (optional)
  • 2 tbsp orange extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8-inch round cake pans.
  2. In a large bowl, combine the vanilla cake mix and orange vegan gelatin mix.
  3. Add orange juice, vegetable oil, eggs, vanilla extract, and orange zest; beat until smooth.
  4. Divide batter between pans and bake for 25–30 minutes until springy to touch. Cool for 10 minutes before transferring to wire racks.
  5. For frosting, beat softened butter until fluffy; gradually mix in powdered sugar. Add coconut cream and optional orange extract for extra creaminess.
  6. Once cakes are cool, frost one layer generously before stacking the second layer on top and frosting the entire cake.
