  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • chili flakes (for serving)

Instructions

  1. Prepare by chopping onion and mincing garlic. Season salmon fillets with garlic powder, paprika, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Sear salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, sauté onions and garlic until fragrant. Stir in thyme and toast orzo for about a minute.
  4. Add chicken broth; bring to a boil then simmer uncovered until orzo is nearly al dente (about 8 minutes).
  5. Fold in spinach until wilted, then add lemon juice and Parmesan cheese. Adjust seasoning as needed.
  6. Return the salmon to the skillet; let everything simmer together for another 2-3 minutes.
  7. Serve warm topped with freshly ground pepper.
