  • 17 ounces paneer pasta
  • 4 cups chicken stock
  • 1 medium onion, chopped
  • 1 cup heavy whipping cream
  • 4 to 5 ounces fresh spinach
  • 1 cup sun-dried tomatoes
  • 1/2 cup freshly shredded parmesan cheese
  • 1 tablespoon sun-dried tomato oil
  • 1/3 cup tomato paste
  • 5 garlic cloves, minced
  • 1 teaspoon red chili flakes
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1/4 cup fresh basil

Instructions

  1. In a large pot over medium heat, sauté the chopped onion in sun-dried tomato oil until translucent.
  2. Add minced garlic and sun-dried tomatoes; cook for another minute until fragrant.
  3. Stir in paneer pasta, chicken stock, heavy cream, tomato paste, red chili flakes, salt, and pepper. Mix well.
  4. Bring to a gentle boil. Reduce heat to low and cover; simmer for 15-20 minutes or until pasta is cooked through.
  5. In the last few minutes of cooking, add fresh spinach and shredded parmesan cheese; stir until spinach wilts.
  6. Serve hot, garnished with fresh basil.
