  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar or Mexican blend cheese

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken pieces, garlic powder, onion powder, chili powder, cumin, salt, and pepper. Sauté for 5–6 minutes until the chicken is mostly cooked.
  2. Stir in the uncooked rice and Rotel (juices included). Cook for an additional 1–2 minutes.
  3. Add chicken broth and bring to a boil. Reduce heat to low, cover, and let simmer for 20–25 minutes until the rice is tender.
  4. Stir in nacho cheese sauce and one cup of shredded cheese until melted.
  5. Remove from heat and sprinkle remaining cheese on top. Let sit for 5 minutes before serving with desired toppings.
