  • 1.5 pounds shrimp, peeled and deveined
  • 4 cups low-sodium chicken broth
  • ½ cup white apple vinegar (optional)
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • Juice and zest of 1 lemon
  • ¼ cup fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. In a large skillet, heat olive oil and butter over medium heat. Sauté diced onion for about 5 minutes until softened. Add minced garlic and red pepper flakes (if using), cooking until fragrant.
  2. Stir in the orzo pasta and toast for 1–2 minutes. If using white apple vinegar, add it now to deglaze the pan.
  3. Pour in the chicken broth along with lemon zest, salt, and pepper. Bring to a boil, then reduce heat and cover. Simmer for about 10–12 minutes until most liquid is absorbed.
  4. Gently stir in the shrimp and cover again. Cook for another 3–5 minutes until shrimp are pink.
  5. Remove from heat; fold in Parmesan cheese and heavy cream until combined.
  6. Finish with fresh lemon juice and chopped parsley before serving hot.
