  • 4 skinless boneless chicken thighs
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 200g fresh pineapple chunks
  • 1 small shallot
  • juice of 1 lime, plus extra wedges for serving
  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed
  • 8 small corn or flour tortillas

Instructions

  1. Preheat your oven to 200 degrees Celsius. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and minced garlic.
  2. Chop chicken into bite-sized pieces and coat in the marinade. Let it sit while the oven preheats.
  3. Spread marinated chicken and pineapple on a baking tray and roast for about 30 minutes.
  4. While roasting, chop shallot and cube avocado. Lightly char tortillas in a hot pan.
  5. Once cooked, squeeze lime juice over the chicken and pineapple mixture. Serve with shallots, avocado, and warm tortillas.
