  • 7 oz sliced mushrooms (200g)
  • 2 cups fresh baby spinach
  • 3 oz mozzarella cheese (80g)
  • 2 tablespoons unsalted butter (30g)
  • Salt and black pepper to taste
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme leaves

Instructions

  1. In a skillet over medium heat, melt the butter and sauté the mushrooms until golden brown. Add garlic and thyme; cook until fragrant.
  2. Stir in fresh spinach until just wilted; remove from heat.
  3. Season chicken breasts with salt and pepper. Create pockets by slicing into one side of each breast.
  4. Fill pockets with the mushroom mixture and top with mozzarella slices before sealing.
